Caramelized Plantains and Brie Cheese

Ingredients:
·         Ripe plantain
·         Brie cheese
·         Berries
·         Walnuts
·         Lemon custard
·         Brown sugar
·         Mango for decoration

Recipe:
Grease the sides of a ramekin cup and put parchment paper on the bottom. Cut a long slice of the plantain and fold it along the inside of the ramekin cup.



Fill the plantain ring with chopped brie, walnuts and berries, bake in a preheated oven at 375 F until the sides of the plantain turn brown. Sprinkle with sugar and cook for 5 minute more or until caramelized. Keep at room temperature for 5 – 10 minutes before serving. Serve with lemon custard on the side.








Strawberry Trifle

Ingredients:
·         Jelly rolls, sliced   (1 package)
·         Vanilla instant pudding mix     (1 package)
·         Milk   (1  ½ cups)
·         Frozen whipped topping  (3 cups)
·         Strawberries, sliced   (2 cups)

Recipe:
Cut jelly roll into 3 slices, arrange cut sides of slices around sides and bottom of a 2 quart trifle dish. Fill in with remaining jelly roll slices.
Prepare pudding mix according to package directions, using 1 ½ cups milk, and let stand 5 minutes. Pour in 1 cup whipped topping.
Arrange half of sliced strawberries over jelly roll slices, stop with pudding mixture. Arrange remaining sliced strawberries over pudding mixture, dollop or pipe remaining whipped topping on top. Garnish with additional strawberries, if desired.








Tiramisu 

Ingredients:
·         boudoir biscuits, or similar   (12)
·         mascarpone   (150 g)
·         single cream    (150 g)
·         egg yolks   (2)
·         sugar   (4 tsp)
·         small glass cognac    (1  )
·         unsweetened cocoa powder  (3  tsp)
·         strong black coffee  (1  cup)

Recipe:
Pour coffee into a shallow bowl. Soak biscuits in coffee quickly, so they do not disintegrate. Line bottom of dish with biscuits. Whip sugar, egg yolks and cognac together until mixture has a mousse consistency.
Whip cream, and then add to egg white mixture. Spread evenly over biscuits. Let for 2 or 3 hours.








White Wine & Apple Sprizer

Ingredients:
·         white wine (1 )
·         apple pie liqueur or apple juice (6 ounces)
·         lime juice  (3/4 ounces)
·         club soda
·         cinnamon sticks and apple slices for garnish

Recipe:
Combine white wine with apple pie liqueur and lime juice. When ready to serve, pour wine mixture into glasses and top off with club soda. Garnish with a cinnamon stick and apple slice.






Easy Coffee Dessert

Ingredients:
·         Milk (1   lit.)
·         condensed milk  (1/2  tin)
·         corn flour (4 ½ tblsp)
·         cocoa powder  (1 tsp)
·         coffee powder  (3 tsp)
·         sugar
·         nestle dessert cream
·         chocolate

Recipe:
Boil the milk and sugar together. Then mix the rest of the ingredients except the condensed milk with a little milk to make a paste.
Add this paste to the boiling milk on the stove and stir continuously to avoid lumps and remove when thicken.
Add the condensed milk, then pour into bowls and before serving top with nestle dessert cream, chocolate or anything you fancy.



Blueberry Cream Cheese

Ingredients:
·         dinner rolls, thawed to room temperature  (12)
·         butter, softened    (1 cup)
·         sugar (2 ½   cup)
·         eggs   (3)
·         cream cheese, softened  (16 ounces)
·         cornstarch  (1/4 cup)
·         salt
·         lemon peel, grated  (1 tsp)
·         blueberries, thawed   (1 cup)
·         flour   (1 cup)

Recipe:
Combine rolls and roll into a 12x17 inch rectangle. Cover with sprayed plastic wrap and let rest. Then cream butter and sugar in a medium bowl until light and fluffy. Beat in eggs, cream cheese, cornstarch and lemon peel.
Uncover dough and place in a sprayed jelly roll pan to cover bottom and sides. Spread cream cheese mixture over dough. Top with blueberries. Mix flour, sugar and salt in a medium bowl. Gradually add butter to flour mixture using a fork. Mixture should resemble crumbs. Sprinkle crumb topping over filling and blueberries. Let stand 15 minutes. Bake at 350° F for 45 minutes.
