Pomegranate Stew (khoresht e Anar)



Ingredients:

·         Chicken thighs 
·         Onion
·         Pomegranate’s seed
·         Tomato paste
·         Pomegranate
·         Salt + pepper (The required amount)
·         Fried eggplant

Recipe:
Slice the onion and fry, after the onions were fried add chicken thighs with onion and sauté, and then add pomegranate and little sauté.
Add tomato paste, salt with little sauté and add water. Leave on medium heat until completely settle.
In the last step, add pomegranate and pepper to a boil. Remove from heat and pour in the container. Fried eggplant around stew.


Sour Chicken Stew (Morghe Torsh)



Ingredients: (for 4)
·         Chicken thigh and breast pieces to the number that you think you Medium Onion
·         Herbs, including parsley, coriander, and dill chopped (1.5 cups)
·         Garlic Chopped (1 cup)
·         Pennyroyal or mint (2 tsp)
·         Lemon juice or sour orange juice, depending on your tate.
·         Saffron, dissolved in boiling water for about ¼ cut
·         Cotyledon  (3/1 cup)
·         Eggs (2)
·         Rice flour (4 tsp)
·         Water

 Recipe:
The fresh vegetables are chopped very finely and then fry. Put the mixture aside. Chopped onions and fry well. The chicken pieces sauté until slightly golden. The chicken, split peas, fried onions and vegetables into the pot throw. Pour 4 cups water, add salt and pepper to taste; cover the pot and bring to boil. Reduce heat to medium-low and cook for 20 minutes.

Torshe Shami


Ingredients:  (for 4)

·         Minced Meat    (100 gram)
·         Slice the potatoes   (for decoration)
·         Onion   (1)
·         Egg   (1)
·         Tomato paste     (3 tsp)
·         Orange juice or lemon juice   (3 tsp)
·         Salt, pepper and turmeric (to taste)
·         Oil to the extent necessary
·         Saffron

Recipe:

We grated potatoes and onion into the meat. Add Eggs, salt, pepper and turmeric and good knead. When completely mixed, some of it taken in hand as flattened oval and fried.

Slice the potatoes fried in oil and Put the aside. And sauté tomato paste. Then adding Verjuice, salt and pepper. After two minutes, three cups of boiling water, throw in the pot with the saffron. After two minutes, boil the sauce, cutlets, and the throw in the pot until cook.
We can tomatoes in half crosswise cut to sauté in oil and then adding.The food they eat with rice.


Sabzi Stew (Ghorme Sabzi)



Ingredient:

·         Meat
·         Herbs (leek – parsley, a little spinach - fenugreek)
·         Onion    (1)
·         Red Bean
·         lemon juice
·         Oil
·         Salt and Pepper
·         Spice

Recipe:

Wash and overnight the beans.
Wash and completely dry the herbs and chopped and fried in oil.
Slice onion and cook until golden, then add the meat and cook until the meat juice is extracted
Meat, onion, bean and spices in a pot and poured six cups water. Stew should be cooked with gentle heat. After the meat and beans were shortly cooked will be adding fried herbs.
At the end of cooking salt, pepper - add lime dust. (Rounded lemon can be added if needed). The food they eat with rice.



Stew Gheymeh & eggplant (Gheymeh Bademjan)


Ingredients:

·         Beef   (200 g)
·         Cotyledon   (60 g)
·         Tomato paste    (2tsp)
·         Onion    (1)
·         Water
·         Eggplant (2)
·         Salt, Pepper and turmeric to the extent necessary
·         Oil

Recipe:

Chop the onion and fry. In the oil until it gold.  Add meat and cotyledon and good sauté.
Can then add the tomato paste.
In a separate pot to boil your water, then add seasoning to the water. Over low heat for one hour left to stew leave to settle.
The eggplant fry for 10 minutes before removing the stew to add. The food they eat with rice.



Baghela ghatogh


Ingredients:
·         Cranberry beans (500 g) (Bean seeds out of the shell and throw into the water to be easily separated from the shell)
·         Dried dill   (4 spoon)
·         Egg   (3)
·         Minced garlic (2)
·         Salt and Pepper:  To taste
·         Water:  (3 cups)
·         Turmeric (2)

 Recipe:

fry the garlic and add turmeric, good stir then add cranberry beans, salt and pepper stir.

 add water and let it cook on medium heat for 25-30 minutes.  Eggs completely (not stir) are added to the stew. And cover for 10 minutes. Serve with rice (kateh-style)


Khoreshte aloo


Ingredients:
·         Chicken
·         Onion
·         Salt, pepper and turmeric (to taste)
·         Pitted prunes
·         Saffron (1/2 tsp)
·         Oil

Recipe:

Wash prunes and soak in some of cold water for 30 minutes.
Peel and thinly slice onions. Fry in oil until slightly golden. Add chicken pieces and fry in onions until color changes. Add salt, prunes and to chicken and cook over medium heat for about 20-30 minutes.



Prunes –spinach stew (aloo sfenaj)


Ingredients:

·         Chicken pieces
·         Onion
·         Spinach (chopped)
·         Salt, pepper and turmeric (to taste)
·         Pitted prunes
·         Saffron (½ tsp)
·         Oil
·         Water
·         Lemon juice

Recipe:

Mirza ghasemi
Ingredients:
·         Eggplants    (3)
·         Egg     (3)
·         Tomato   (2)
·         Salt, pepper, turmeric   (to taste)
·         Oil                   (to tast)
·         Garlic              (3)

 Recipe:
Grilled the eggplant and Once they have cooled down peel the skin off. This should be easy and quick, rough chop the eggplant, tomatoes and garlic.

Fry the garlic in oil, add turmeric and stir then add eggplant and after 5 minutes add tomato stir well. Separate the eggs are scrambled and add.
This food serves with rice or bread.



Torshe-tareh
Ingredients:
·         Herbs: (spinach, coriander)
·         Rice 1 spoon
·         Eggs
·         Garlic chopped
·         Grape verjuice or lemon juice, based on taste
·         Salt, pepper, turmeric (to taste)
·         Oil
spinach, coriander, eggs, garlic, grape verjuice, salt & pepper, turmeric, oil

Recipe:
Spinach and coriander finely chopped, then wash the rice and add to spinach and coriander in the pot, add water (2 cups) and grape verjuice or lemon juice, herbs and rice to be cooked and water isn’t  in the pot. Water is absorbed.
Fry garlic chopped adds turmeric and herbs with rice, well stir.  Add salt and pepper. Separate the eggs are scrambled and add .and stir.
This food serve with rice or bread.


Baghla vavige

Ingredients:
·         Fava beans
·         Garlic chopped
·         Eggs
·         Dried dill 4 spoon
·         Salt, pepper, turmeric
·         oil

Recipe:
The Fava beans are separated from each shell. Let the Fava beans in half crosswise with a knife. Be cooked with little water. Should not be crushed.


Fry the garlic chopped, add turmeric and dried dill, well stir. Add fava beans (without water) and stir, add salt and pepper. Separate the eggs are scrambled and add and stir. This food serves with rice.



Sirabige:

Ingredients:
·         Leaves of fresh garlic 1 kg
·         Garlic chopped
·         Salt, pepper and turmeric (to taste)
·         Eggs
·         Oil
garlic, eggs, salt & pepper, turmeric, oil, leaves of fresh garlic

Recipe:
Leaves of fresh garlic well wash and finely chopped, fry in oil (well fry) add turmeric, salt and pepper. Separate the eggs are scrambled and add and stir. This food serves with rice.
