BURRITO WITH CHICKEN
Ingredients:
·         Rice   (90  g)
·         Oil    (1 tsp)
·         Onion, chopped   (1)
·         Powdered cloves  (1 tsp)
·         Oregano  (1)
·         Tomatoes, grated  (200  g)
·         Chicken breast (without bone and skin)
·         Cheddar cheese, grated   (150 g)
·         Tortilla  (8)
·         Salt (to taste)

Recipe:
First pour the rice into the boil water till soft and drain. Fried the onion and add powdered cloves, oregano, tomatoes, rice and salt. Then let cooked the rice.
Cooked the chickens and crushed. Mix it with cheddar cheese and rice. Mixture all ingredients and put into the tortilla and make roll.






PASTITSIO
Ingredients:
·         macaroni   (250 g)
·         egg   (2)
·         parmesan cheese  (3  cup)
·         bread flour    (2 tsp)
·         olive oil   (2 tsp)
·         onion, chopped   (2)
·         garlic  (hopped)   (2)
·         lean ground beef   (750 g)
·         dry red wine  (1/2  cup)
·         fresh parsley, chopped   (2  tsp)
·         salt and pepper (to taste)
·         tomato  paste
·         butter
·         milk   (3 cup)
·         cinnamon (to taste)
·         meat broth   (1 cup)

Recipe:
In a pot pour water and salt till boil. Add macaroni and cook for 10 minutes, drain and return to pan. The butter melted and pours macaroni, parmesan cheese, cinnamon, salt and pepper, then well sauté and let to cool. Add eggs beaten and set aside.
Fry onion and garlic and add ground beef, stir well and cook until meat begins to brown. Add tomato paste, wine, meat broth, parsley (chopped), salt and pepper. Cover and simmer over low heat for 25 minutes.
Cream sauce:
In a melt butter adds bread flour and cook for 2 minutes. Pour milk to melt butter and add salt and pepper; bring to a boil, stirring constantly.



In a dish half of the prepared macaroni and pour on cream sauce and spread to completely cover macaroni and pour on cream sauce again and sprinkle remaining cheese on ingredients.


Bake in a preheated oven until golden brown. Let cool and cutting into squares to serve.






RATATOUILLE
Ingredients:
·         onion, sliced  (1)
·         garlic, chopped  (4)
·         eggplants, chopped into bite sized pieces   (2)
·         red, yellow, green and orange pepper, chopped  (1)
·         zucchini, chopped into bite-sized pieces   (1)
·         olive oil
·         tomatoes, chopped (3)
·         tomato paste (to taste)
·         fresh or dried oregano (a few)
·         fresh spinach, chopped   (a few)
·          basil, chopped (a few)

Recipe:
In a pot pour olive oil and fry the onion and stirring until soft and starting to turn golden. Then add the garlic, eggplant and cook for 5 minutes until the eggplant is soft. Add the peppers, zucchini, salt and cook for about 10 minutes. Then add the tomatoes, tomato paste and oregano, spinach and basil. Let cook until everything is soft and the mixture is thick.


PAELLA
Ingredients:
·         Prawn  (to taste)
·         Chicken thighs   (4)
·         Salt & pepper
·         Olive oil
·         Chicken stock  (4  cup)
·         Saffron ( 2 tsp)
·         Onion, chopped (1)
·         Red pepper, chopped (1)
·         Garlic , chopped   (2)
·         Tomato, chopped (2)
·         Rice  (2 cup)
·         Lemon  (1)

Recipe:
The chicken fried well until brown golden. To prepare the saffron stock, bring the chicken broth to a simmer in a saucepan and stir in the saffron. The onion finely chopped and fries, until it just begins to color. Add pepper, garlic and tomato and sauté. Cook for several minutes, until the pan juices have evaporated, and then add rice into it.
Wash and clean the prawn. In an other pan fry the prawn.
When the rice cooked serve and put chicken and prawn over all.



AKARA
Ingredients:
·         Bean flour   (500  g)
·          Knorr cube    (1)
·         Onion, chopped  (1)
·         Garlic, chopped   (2)
·         Ginger  (to taste)
·         Red chili pepper   (to taste)
·         Sweet red pepper   (to taste)
·         Salt & pepper   (to taste)
·         oil

Recipe:
Finely chopped the onion and garlic, set aside. In a bowl, add flour, water and onions, garlic, ginger, red chili pepper, sweet red pepper and salt. Stir thoroughly (a cake batter consistency). Heat oil in a fry pan till hot, drop 1 tsp of batter into oil. Let till it starts to turn medium brown.




CALCUTTA CHICKEN
Ingredients:
·         chicken fillet
·         onion, chopped  (1)
·         green peppers  (1)
·         garlic  (2)
·         oil
·         salt & pepper (to taste)
·         rice   (500 g)
·         butter  (to taste)
·         egg, cooked   (2)

sauce:
·         onion  (5)
·         raisins   (1 cup)
·         oil
·         sugar
·         salt
·         curry powder   (to taste)
·         lemon juice (little)

Recipe:
The onion & garlic finely chopped and in a pot pour a little oil and fry the onion & garlic. Add chicken, salt and green pepper and sauté. Add  water and let to cook. wash and cooked the rice.

Sauce:
The onions finely chopped and fry. Add raisins, sugar, salt, curry powder, and stir. Then add water, let to cook and then remove to a bowl.







RICE BULGUR 

Ingredients:
·         Olive oil       (3  tsp)
·         Onions chopped     (2)
·         Chili red paste    (to taste)
·         Tomatoes, chopped      (3)
·         Salt and pepper (to taste)
·         Bulgur rinsed  (2 cup)
·         Chicken extract   (1 lit)

Recipe:
In a pan heat fry the onions and add pepper, tomato paste and ingredients. Cook a few minutes until onions and tomatoes are soft.
Then add Bulgur rinsed with chicken extract and wait until the ingredients to boil and closed the pot lid for 20 minutes.






Chicken Borek 

Ingredients:

·         Yufka dough       (3  tsp)
·         Chicken breast, cooked and chopped      (400 g)
·         Red, yellow and green pepper    (1)
·         Tomatoes, chopped      (3)
·         Salt and pepper (to taste)
·         Parsley, chopped  (2 cup)
·         Onion    (1 )
·         Oil
·         Mozzarella cheese   (200 g)

Recipe:

Chopped chicken breast, tomato, parsley, (green, yellow, red) pepper and onion. Fried onion and chicken until cook. Add all of the ingredients to chicken and sauté. Then put all the ingredient into the yufka dough and pour mozzarella cheese and wrap. Then fry wraps until golden.  








Manti 

Ingredients:

·         Flour  (500 g)
·         Lukewarm water    (2/3 cup)
·         Salt & pepper  (to taste)
·         Egg    (1)
·         Ground beef   (400 g)
·         Onion finely chopped    (1)
·         Yogurt   (400 g)
·         Garlic   (2)
·         Dried mint
·         Paprika powder   (to taste)
·         Butter  (3  tsp)
·         Tomato paste   (2  tsp)
·         Sumac  (to taste)

Recipe:

In a bowl pour flour, egg, water, salt and pepper. Then knead till you get a firm and smooth dough for about 8 minutes.



Cover it and leave for a rest.



In a plate ground beef, onion (finely chopped), salt and pepper well mix them and set aside. The dough divides into 3 pieces, take one piece and cover the rest of the dough. Then with a rolling pin flatten the dough to make thin.



Then cut it with a knife to square pieces.



Then place filling over each square.



Then stick the both traverse edges diagonally, by pressing with your finger tips.



In a pot boiled the water and add salt then pour all the manti into the water and cook over medium heat till manti gets soft for 10 minutes. In a pan melt the butter and add tomato paste, paprika and water, let cook for 2 minutes over low heat.

Mix the yogurt and garlic (chopped). Drain the cooked manti and put it into serving plates. After it cooled, the yogurt and tomato sauce pour all over and desired with dried mint and sumac.
