SALAD

PERSIAN SALAD

LETTUCE SALAD:

Ingredients:
·         Lettuce    (1)
·         Cucumber    (2)
·         Tomato   (2)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Red cabbage   (2 cup
·         Egg cooked   (1)
·         Red pepper   (1)
·         Corn cooked   (1 cup)
lemon juice, olive oil, salt & pepper, lettuce, cucumber, tomato, red cabbage
eggs cooked, corn, red pepper

Sauce:
·         Mayonnaise   (1 tsp)
·         Yogurt  (2 tsp)
·         Salt and pepper  (to taste)
·         Sugar (to taste)
·         spearmint  (to taste)

Recipe:
Cut lettuce four section and open it. Then cucumber, red   cabbage, red pepper and tomato chopped. Add all ingredients except eggs mix them and pour into the lettuce. The egg on half crosswise and put the salad.  Sauce: all ingredients mix them and pour over salad.




SHIRAZI SALAD:  

Ingredients:
·         Cucumber    (3)
·         Tomato   (2)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Salt & pepper (to taste)
·         Dried spearmint or mint  (to taste)
·         Onion  (1)

Recipe: 

Wash and peel the cucumbers, tomatoes. The onion finely chopped and mix them. Then add lemon juice, olive oil, salt & pepper, dried spearmint or mint into the salad and mix them.








OLVIEH SALAD:  

Ingredients:

·         Potato cooked  (3)
·         Eggs cooked  (2)
·         Chicken cooked and finely chopped  (2 breast)
·         Yogurt  (2 cup)
·         Mayonnaise (3 cup)
·         Peas cooked  (1 cup)
·         Corn cooked (1 cup)
·         Pickled cucumber  (2)
·         Tomato   (1  for decoration)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Salt & pepper (to taste)
·         Chicken juice

Recipe: 

Potato & eggs cooked and grate. Then chicken cooked and finely chopped. Add peas, corn, potato and eggs to chicken and mix them. Pickled cucumber finely chopped and adds to them. Yogurt, mayonnaise, salt, pepper, lemon juice and chicken juice well mixed and all ingredients mix them. Serve into the plate and with tomato decorate.






EGGPLANT SALAD:  

Ingredients:

·         Eggs cooked  (2)
·         Mayonnaise (3 cup)
·         Tomato   (1  for decoration)
·         Lemon juice   (2 tsp)
·         Salt & pepper (to taste)
·         Eggplants grilled and without skin (500  g)
·         Rice cooked (200 g)
·         Chopped mint  (to taste)
·         Cream  (to taste)
·         Cucumber (2)
·         Garlic grated (2)

Recipe: 

The eggplants grilled and peel to skin. Finley chopped eggplants. Eggs cooked, rice cooked, cucumber chopped and tomato chopped mix them and add to eggplants. Then mayonnaise, lemon juice, salt & pepper, chopped mint, garlic chopped and cream well mixed and add ingredients and mix them.




KALE KABAB: 

Ingredients:
·         Salt & pepper (to taste)
·         Eggplants grilled and without skin (500  g)
·         Garlic grated (2)
·         Sour pomegranate juice  (1 cup)
·         Fresh or dried mint, or aromatic herbs  (3 tsp)
·         Walnut mixture

Recipe:

First grilled the eggplants and take the skin and mixture.

Then garlic chopped and walnut mixture. Add salt & pepper, garlic chopped, sour pomegranate juice, fresh or dried mint and walnut mixture to eggplant and well mix.



BORANI BADEMJAN:

·         Salt & pepper (to taste)
·         Eggplants grilled and without skin (500  g)
·         Garlic grated (2)
·         Yogurt  (1 cup)
·         dried mint, or aromatic herbs  (3 tsp)

Recipe: 
First grilled the eggplants and take the skin and mixture. Then salt & pepper, garlic grated, dried mint and yogurt add to eggplant and well mix.

TURKISH SALAD
 
PEAS SALAD:

Ingredients:
·         Peas   (2 cup)
·         Pickled cucumber     (3)
·         Olive without core     (1 cup)
·         Lemon juice   (2 tsp)
·         Fresh dill   (2 cup)
·         Olive oil   (to taste)
·         Salt and pepper  (to taste)

Recipe:
The peas are cooked and let to be cool, set aside. Dill and pickled cucumber well chopped. Now add all ingredients:






CELERY ROOT SALAD:  

Ingredients:

·         Celery root  (2)
·         Yogurt   (3 tsp)
·         Garlic  (2)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Salt and pepper  (to taste)
·         Mayonnaise (to taste)
·         Walnut crushed  (to taste)
·         Parsley  (for decoration)

Recipe:

Crushed the walnuts and set aside, peel the celery roots and grate well, add lemon juice, garlic grated, mayonnaise, yogurt, salt & pepper, olive oil and mix them. Take over a serving plate and cover with walnuts and parsley.





CAULIFLOWER SALAD: 

Ingredients:

·         Cauliflower
·         honey   (to taste)
·         Garlic  (2)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Salt and pepper  (to taste)
·         Parsley  (for decoration)

Recipe:

In boiling water throw cauliflower and salt,  for 8 minutes, drain and to cool. In a bowl, add honey, garlic chopped, lemon juice, olive oil, pepper & salt and mix them. Cauliflowers served in a dish and pour ingredients over salad and with parsley decoration.






ZUCCHINI SALAD:  

Ingredients:

·         Zucchini    (1 kg)
·         Walnuts chopped   (to taste)
·         Garlic  (2)
·         Lemon juice   (2 tsp)
·         Olive oil   (to taste)
·         Salt and pepper  (to taste)
·         Yogurt  (to taste)

Recipe:

Chopped garlic, and mix with salt and pepper, yogurt. Then wash zucchini and grate without peeling. In a pan pour olive oil and zucchini over medium heat and sauté till they get soft and set aside for cooling. After cooling add with ingredients and stir. Serve in the plate and put Strew walnuts all over salad.






ITALIAN SALAD





PASTA SALAD:   

Ingredients:

·         Artichoke hearts  (1 cup)
·         Green pepper, cut in strips  (1)
·         Red pepper, cut in strips (1)
·         Yellow pepper cut in strips (1)
·         Black olive, sliced  (1 cup)
·         Onion chopped  (1)
·         Tomato chopped (1)
·         Celery sliced  (1  cup)
·         Tri color pasta (1 pack)
·         Cold cuts (to taste)

artichoke, tomato, green pepper, red pepper, yellow pepper, artichoke heaarts
black olive, onions, celery, tri color pasta, cold cuts

Italian Sauce:

·         Salt and pepper  (to taste)
·         Olive oil (3/4 cup)
·         Red wine vinegar (1/4 cup)
·         Garlic grated (2)
·         Fresh basil, finely minced  (1 tsp)
·         Fresh oregano, finely minced (1 tsp)
·         Parmesan cheese grated (1 cup)

Recipe: 
In the pot, boiled water and put the pasta until soft, drain and let cool. Chopped the artichoke, onion, tomato and cold cuts. Sliced the celery, black olive. Red pepper, green pepper and yellow pepper cut in strips. 
 In a bowl all the ingredients well mix together and add pasta to them and mix again. Pour sauce (Recipe for sauce: ingredients all of them mix) over salad and well stir. Serve them.






CHOPPED SALAD:   

Ingredients:

·         Lettuce (1)
·         salami  (1)
·         chick peas cooked  (1 cup)
·         cherry tomato  (1 cup)
·         red onion, chopped  (1 cup)
·         shredded Mozzarella cheese (1 cup)
·         salt and pepper (to taste)
·         olive oil (to taste)

Recipe: 

Chopped finely lettuce, salami, and red onion and mix them. Chick peas well cooked. Then all of the ingredients well mix and use with Italian sauce over them.





PANZANEL SALAD:   

Ingredients:

·         toast   (300 g)
·         balsamico vinegar   (2  tsp)
·         tomato chopped  (1 cup)
·         cucumber  (1 )
·         red onion, chopped  (1 cup)
·         red pepper, chopped (1 cup)
·         salt and pepper (to taste)
·         olive oil (to taste)
·         garlic  chopped (1)

toast, balsamico vinegar, tomato, cucumber, red onion, red pepper, garlic


Recipe: 

First, we toast the bread with toaster or oven and cut to the cube.


 Then mix the ingredients together and put in the refrigerator for 30 minutes. When serving salad, add breads and slowly mix them. This salad is very delicious and healthy.






CABBAGE SALAD:   

Ingredients:

·         white cabbage   (1 medium)
·         raisins (2 tsp)
·         crated carrots  (1 cup)
·         dressing of Italian (to taste)
·         red onion, chopped  (1 cup)
·         salt and pepper (to taste)
·         olive oil (to taste)
·         lemon juice


red onion, lemon juice, raisins, oilive oil, dressing of italian

Recipe: 
First, we chopped cabbage and red onion. The carrots grated. Add raisins, salt and pepper, olive oil and lemon juice to them and mix. Italian dressing over them.



GREEK SALAD


CIABATTA   SALAD:   

Ingredients:

·         half a ciabatta white bread
·         cucumber, sliced cubic  (2)
·         tomato, chopped  (2)
·         oregano dried  (1 tsp)
·         cheese feta, chopped  (100  g)
·         olives (some)
·         red onion, chopped  (1 cup)
·         salt and pepper (to taste)
·         olive oil (to taste)
·         fresh dill, chopped   (some)
·         brown vinegar  (to taste)

Recipe: 

First, we cut bread into some pieces and put into oven until to be golden, and let cool. Then cucumbers, tomatoes, olives, onion, oregano, feta cheese chopped. The ingredients pour into the bowl and add salt & pepper, olive oil, brown vinegar and stir. The fresh dill chopped and adds to ingredients. Then put bread and on the salad and stir.

LEBANESE SALAD



TOBOULEH   SALAD:   

Ingredients:

·         groats  (1 cup)
·         fresh parsley, finely chopped  (2  cup)
·         tomato, chopped  (2)
·         fresh mint, finely chopped (2 cup)
·         red onion, chopped  (1 cup)
·         salt and pepper (to taste)
·         olive oil (to taste)
·         lemon juice (to taste)
·         spice (to taste)

Recipe: 

Wash and finely chopped parsley and mint. Wash the groats for several times and soak into the warm water for 15 minutes and drain. chopped tomatoes. In a bowl mix all ingredients.





MOROCCAN SALAD






MOROCCNA   SALAD:   

Ingredients:

·         orange   (4)
·         radish   (10)
·         red onion  (1 cup)
·         black olive without core  (some)

Sauce:
·         Salt and pepper  (to taste)
·         Olive oil (3/4 cup)
·         Paprika powder (1 tsp)
·         Garlic  (1)
·         Cinnamon powder  (1  tsp)
·         Lemon juice  (to taste)
·         Sugar ( 1  tsp)
·         Salad dressing   (to taste)

salt & pepper, olive oil, paprika powder, garlic, cinnamon, lemon juice, sugar


Recipe: 

Wash and peeled oranges and cut crisp. Then radish and red onion cut crisp and put over the oranges in a bowl.  All of the sauce ingredients mix them and pour over the salad.
